Black mustard seeds, also known as Rai, Lal sarsu, or brown mustard seed are widely used in indian cooking and are the most pungent of all mustard seeds. The small and tiny black mustard seeds are excellent for curries, as they give each recipe a somewhat spicy, aromatic note. The enzyme Myrosine is what creates that special taste of the black mustard seed. Roasting the seeds in Ghee keeps the taste subtle and creates a less pungent, yet nicely nutty flavor to curry pastes.

In Ayurveda, black mustard seeds are valued for their quality of supporting Agni - the fire of digestion, and for being helpful in the metabolism of food.
