Tala Jaggery Palm-heart sugar, 180 g
Tala Jaggery, a high quality raw sugar, is made from palm heart from the Atta-palm (also called sugar palm), which is slowly dried under careful conditions.
There is no further refining and therfore Tala Jaggery retains all the valuable ingredients of the palm sap. Classic Ayurveda Palm Heart Sugar Tala Jaggery is fine and loose. It has an exquisite taste which makes it very suitable for sweet desserts. However, it should be used sparingly otherwise it can produce Ama*.

* Note about the ayurvedic term Ama:
In the ayurvedic scriptures, the term „Ama“ is being used regularly. The word-to-word translation of Ama is: undigested. According to the ayurvedic scriptures, Ama occurs when our intake of food is not digested properly according to bad eating habits, or to a weak Agni (= digestive fire). According to ayurvedic knowledge, Ama is described as a kind of slag material in the body, which can slow down any kind of metabolic processes. An equivalent, corresponding term in western science to the term “Ama”, which we have transposed as “metabolic waste products”, to date does not exist.
